"Rainbow" Cupcakes

The other day, as I was in the checkout line at the grocery store, I spotted a "cupcake" cookbook. Now, normally, I wouldn't be interested in it, but the picture on the cover was SO pretty, I just couldn't resist! Seeing as I had nothing better to do I decided to make them. OYE! While they ARE adorable, they were a LOT of work!
Ingredients:
Water, vegetable oil and egg whites called for on cake mix box
Gel food colors or paste food colors (red, orange, yellow, green, blue & purple)
2 containers (1 lb. ea) Betty Crocker Rich & Creamy white frosting
Directions:
Heat oven to 350 (325 for dark or nonstick pans). Place white paper baking cup in each of 24 regular-size muffin cups. Make cake mix as directed on box for cupcakes, using water, oil and egg whites. Divide batter evenly among 6 medium bowls. Add a different food color to each bow to make red, orange, yellow, green, blue and purple. Place 1 level teaspoon of each color batter into each muffin cup, layering colors in order of rainbow -- red, orange, yellow, green, blue and purple. Do not stir! Each cup will be about 1/2 full. Bake 15-20 minutes or until toothpick comes out clean. Cool ten minutes. Remove to cooling racks. Cool completely.
Divide frosting evenly among 3 medium bowls. Tint 1 red, 1 yellow and 1 blue with food colors. Refrigerate about 30 minutes. In large disposable decorating bag fitted with #6 star tip, place spoonfuls of each color of frosting side by side in bag, alternating colors and working from tip of bag. Do not stir colors together. Starting at 12o'clock on the outer edge of each cupcake and using constant pressure on bag, pipe frosting clockwise for 3 rotations, working toward center and ending in small peak.
The cupcakes are ADORABLE! I couldn't find "gel" or "paste" food coloring (small town living, you know!), so I used "regular" food coloring. I'm thinking the reason it calls for gel or paste is because the colors will be more vibrant. Mine were a bit more pastel than I wanted, but that's OK.

Those are gorgeous. I tried making them once and I have food colour everywhere. My hands looks like a prescholers... was yum tho
